I'm finding Reference document for 0x v3. However i can find only for 0x v4 in here(https://protocol.0x.org/en/latest/) where can i find the document for v3?

Most of the docs have been updated to v4 but here is a link to the v3 specs in github https://github.com/0xProject/0x-protocol-specification/blob/master/v3/v3-specification.md
There is also some reference to v3 in the swap sdk https://docs.swapsdk.xyz/readme-1
