I've setup a couple of Main Network nodes on AWS and, for some odd reason, my net.peerCount never increases over 1. There are also periods when it falls down to 0 and the node lags behind.

This is how I run geth:

geth --syncmode fast --cache 2048 --maxpeers 25 --rpc --rpcapi net,web3,eth,personal --rpcaddr MY_IP_HERE --rpcport 8000 --rpcvhosts MYHOSTHERE --datadir .

I tried adding peers from the geth console, I get a "true" response after the addPeer command, but then the peer isn't actually added to the list.

Any suggestions? All outbound ports are open.
